Slow Cooker Honey BBQ Boneless Pork Loin Ribs

I was super excited for these. The house smelled gorgeously of bbq & honey... Mmmmm... 8 simmering hours. I made these on a day when we were home, in advance because I'm a bit freaked out by leaving something plugged in on all day. Anyone else? So at the end of the cook-time, I tasted the melt-in-your-mouth pork... it was absolutely delicious. Then I did something really stupid. I dished the steaming hot contents into a bowl, topped it with tinfoil for the cool down process. And.left.it.OUT.on.the.counter. OVERNIGHT. (Anyone else?) Bye bye pork ribs :(

I shall be making these again, very very soon! This is the perfect dish if you want BBQ or it you want something delicious without turning on the oven.

Slow Cooker Honey BBQ Boneless Pork loin Ribs
End Product
  • 3 to 4 lbs boneless pork loin ribs
  •  S&P
  • 1/4 c light brown sugar, packed
  • 2 cloves garlic, minced
  • 1/2 c honey
  • 1 bottle barbecue sauce
Spray the insert of a 5 to 6-quart slow cooker. Place pork, fattier side down into the pot. Sprinkle pork with s & p, brown sugar, & minced garlic; turn the pork ribs to coat all pieces. Pour honey & BBQ Sauce evenly over the pork. Cover & cook on LOW for 8 hours. Serve w/ more BBQ sauce on the side.

Honey Sesame Chicken with Rice Noodles


Dinner was extremely tasty after a difficult day. I've been overwhelmed emotionally this week for whatever reason & sometimes, a new dinner with a good outcome can be so welcome (if only because if the outcome's horrendous, it may be the last straw, then tears would ensue.) I had seen this last month & wanted to make it but am just getting around to it.

The chicken was extremely flavorful & I chose the rice noodles for an Asian flare. It would taste delicious served over rice as well.

The picture does NOT do the meal justice; only wish I had remembered the scallions before I said, "cheese!".

Honey Sesame Chicken with Rice Noodles

  • 1 lb boneless, skinless, chicken breasts 
  • 1/4 cup honey
  • 2 TBSp low sodium soy sauce
  • 1/2 small onion, diced
  • TBSp ketchup
  • TBSp canola oil
  • 1 clove garlic, minced
  • pinch red pepper flakes (optional)
  • 2 teaspoons cornstarch dissolved in 3 Tablespoons water
  • sesame seeds
  • scallions (Not pictured) 
  • rice noodles

Preheat oven to 350 F. 


In a sprayed, lidded baking dish, combine the honey, soy sauce, onion, ketchup, oil, garlic & pepper flakes. Add in chicken & make sure chicken is submerged. Place on the lid. Bake for 45-50 minutes. Remove chicken from dish, leave sauce. Add the dissolved cornstarch mixture to the sauce & combine. Replace lid and bake sauce for about ten more minutes or until slightly thickened. Using two forks, shred the chicken & then return to the pot & toss with sauce before serving. Sprinkle with sesame seeds & scallions. Serve over rice noodles.

Honey Lime Chicken

Sunday, Sunday... it's my "plan the week's meals" day... And then our grocery shopping day (after church mass). I get the supermarket circular out, along with a scrap piece of paper, pen & my coups... Ask the hubby 1) if he can remember anything we are out of/need & 2) if there's anything he's been wanting for dinner. Then I go to it. This helps me in so many ways -we save money, -I have the week mapped out ,-it's easy to come home from work & cook, -I prep when I come home from the store. Oh, & gals, my hubby ALWAYS grocery shops WITH me! A huge plus!

This week I saw an amazing price on chicken drumsticks. I ended up getting 12 large drumsticks for $3!!! So this meal was so inexpensive & flavorful. You can use this marinade on any chicken cut too.

Honey Lime Chicken
4 limes, zest & juice of 3, 1 sliced into 1/8s 
1/2 cup honey
3 TBSp canola oil
2 tsp garlic powder
1 tsp dried parsley
12 drumsticks (or any chicken pieces), skin on
2 TBSp fresh parsley, chopped

Whisk together the first 5 ingredients. Add the chicken to the mix & coat all of the pieces. Marinate for at least 15 minutes.

Pre-heat the oven to 450 degrees. 

Lay out the drumsticks on a lined & sprayed jellyroll sheet (baking sheet with sides.) Poor the remaining marinade over the drumsticks. Bake for 30-35 minutes until dark brown.

Serve sprinkled with fresh parsley & with the lime wedges.

Confetti Waffles & Cinnamon Honey Herbed Butter

So I am going to admit this again... yes, I am. Last night, I, Lishie, watched the original Gene Wilder (who I adore) Willy Wonka & the Chocolate Factory for the FIRST time. I agree, odd, but I just had not seen it. My sister Perrie is over so we had giggle time & movie time. She watched this with me then went on to watch some weird cult horror film with my hubby.

This morning, my sister wanted waffles & inspired by the movie, I decided to make confetti waffles:

Confetti Waffles

  • 1 & 3/4 cup AP Flour
  • 2 TBSp Sugar
  • 1 TBSp Baking Powder
  • 1/4 tsp Salt
  • 2 Eggs
  • 1 & 3/4 cup Milk (I use Skim)
  • 1/2 cup Canola Oil
  • 1 tsp Vanilla
  • 2 TBSp RAINBOW SPRINKLES

In a medium bowl stir together flour, sugar, baking powder, & salt. Make a well in center of flour mixture- in other words, push all of the flour mix to the sides of the bowl creating a “hole” in the middle. Set aside.


In another medium bowl beat eggs slightly; stir in milk, oil, & vanilla. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy) then fold in the Sprinkles.

Pour 1 to 2 ice cream scoops of batter onto of a preheated, lightly cooking aprayed waffle baker. Close lid quickly; do not open until done!!!

Follow your waffle maker instructions- mine beeps when the waffle is finished cooking. Carefully lift the waffle (from its edge) from the hot iron with a heat resistant, silicone spatula.


To make the waffles extra special, I made an herbed butter to spread on (shaped as hearts- just mold the mixed butter into a cookie cutter then refrigerate until set.) I LOVE herbed butters... FOr breakfast spreads, for steaks, dinner, etc. They can really transform a meal into something magical.  
Cinnamon Honey Herbed Butter 
  • 1/2 Stick Butter
  • 1 tsp Cinnamon
  • 1 TBSp Honey

Mix all 3 ingredients together in a small bowl. Re-refrigerate to set. Serve!

Apple Oatmeal Cookies

It's another friend's birthday at work & she loves cookies. I mean she eats them almost every day. But, she does not eat chocolate, dark, milk, or white, nor does she eat raisins. That pretty much left me with plain, bo-ring oatmeal cookies. But I wanted something a little more special. These are more cake texture than cookie & have fresh fruit in them. I always recommend these around apple picking season (early Fall) because these are another alternative to the pies, tarts & cakes. And they are also very kid-friendly, mom approved. Well, at least, by this mom!

I really hope Kimberly enjoys these! Happy birthday, Kim!!!


Mrs Fields Apple Oatmeal Cookies Recipe

Slightly adapted from Mrs. Field's Cookie Book (I omitted the raisins).

  • 2 1/2 cups AP Flour
  • 1 cup Quick oats (not instant)
  • 1/2 tsp Salt
  • 1 tsp Soda
  • 1 tsp Cinnamon
  • 1/4 tsp Cloves
  • 2 tsp Grated lemon zest
  • 1 cup Dark brown sugar, packed
  • 3/4 cup Butter
  • 1 large Egg
  • 1/2 cup Unsweetened Applesauce
  • 1/2 cup Honey
  • 1 cup Fresh Apple, peeled and Finely chopped (1 med apple) *I used a Royal Gala
  • *Extra Quick oats (For Topping) *Optional

Preheat oven to 300 degrees.

In a medium bowl combine the flour, oats, salt, soda, cinnamon, cloves and lemon zest. Mix well and set aside.

Cream the sugar and butter together in a large bowl using an electric mixer. Add the egg, applesauce and honey and beat at medium speed until smooth. Add the flour mixture, fresh apple and raisins, and blend at low speed until just combined. The dough will be quite soft.

Drop by rounded tablespoons onto ungreased baking sheets, 1 1/2 inches apart. If you wish, sprinkle the cookies with oats.

Bake the cookies for 23-25 minutes or until the bottoms are golden.
